As much as the history and the culture has been absolutely enthralling and amazing, it is the food that has changed my life. The food I have experienced in Spain has been UNREAL. The level of freshness of the produce and fish is amazing. The meat is also very fresh, sometimes including eyes or other “extras” that America doesn’t offer us. Highlights include the squid I had this past weekend in Barcelona, It was the whole squid sauteed in olive oil and garlic with a little bit of parsley. Light, flavorful and so good! Eating it by the water in the sunshine of Barcelona was definitely a moment to remember. My other favorite dish thus far has been the salmon tartar I bought for an extremely low price at the San Anton market in Madrid. I watched the people make the dish and it was PHENOMENAL. I put a picture below but finely diced salmon a light citrus sauce topped with crushed avocado and sea salt paired with paper thin home made crackers. I will never forget that meal as long as I live. The food, to me, goes in hand withe pride and culture of this country. America is all about racing to the top and being on the go. Spain is much more enticed to enjoy a fine meal with friends and taking the time to enjoy life.
